Ingredients:
- Marinade: 500g chicken, 1 cup plain yogurt, 2 tbsp ginger-garlic paste, 2 tbsp biryani masala, 1 tsp turmeric powder, 1 tsp red chili powder, 1 tsp garam masala, salt, juice of 1 lemon.
- Rice: 2 cups basmati rice, 4 cups water, 3-4 green cardamom pods, 4-5 cloves, 1 bay leaf, 1 tsp caraway seeds, salt.
- Cooking: 3 tbsp ghee or oil, 1 large onion (fried), saffron strands in 2 tbsp warm milk, fresh coriander and mint leaves, 1-2 green chilies (optional).
Instructions:
- Marinate: Blend yogurt, spices, and lemon juice with chicken and refrigerate for at least 2 hours.
- Rice Preparation: Soak rice, then cook with cardamom, cloves, bay leaf, and salt until 70% done. Drain and set aside.
